Fairly fine bubbles emerge from the golden colour, which has a persistent ruff. The nose is full of nuances. It opens frankly with delicious aromas of hazelnut and marzipan.
On aeration, it becomes fresher and evokes acacia honey. After a few minutes, the nose returns to marzipan, candied lemon and bergamot. The nose is rich and mature, typical of its Marne Valley terroir.
The attack is both soft and fresh, with grainy bubbles. The texture of the bubbles mingles with the smoothness of the wine. Aromas of tarte tatin enhance the tasting experience.
This is a typical, elegant Champagne.
At 8-9°C, it would be ideal with a rabbit terrine or pike-perch with julienne vegetables.
